What is the best way to cook a Cornish hen?
Q. I'm currently on the low carb so I cant use any type of bread crumb stuffing for my hens. Was thinking if i baked it in Chicken broth would be fine, but dont know if that would taste good. Any ideas or recipes I can use that will make the cornish hens moiste and not bland tasting?

A. If you put the frozen hens into a bowl of cool water, it does not take too long for them to thaw. About an hour; give or take a few minutes. Be sure to leave the chicken in its water tight plastic bag, and avoid using hot water. Or you can thaw them in the fridge overnight. I wouldn't recommend thawing them in the microwave, tho.

I'm taking care of my dad while my mother is away (meaning preparing his meals and keeping his house clean) and when I went to start washing his dishes, I saw 3 Cornish Game Hens defrosting in the sink. I can only assume that he wants the hens for dinner, but I'm not much of an omnivore, so I have no idea how to prepare them. Does anyone have a suggestion on how to cook them, including ingrediants, applications and cook time? Also, what would be a good side for the hens? (This is a challenge for me in that my stomach churns a bit when I touch meat in the shape of a body, but I can do this!)

A. Baked cornish game hens 4 whole Cornish hens 1/2 c. butter 1 onion, quartered 1 orange, quartered 4 slices celery 2 tbsp. parsley flakes 2 tbsp. A. We buy Dark Cornish chicken from a local guy who raised them organically. The skin is lighter, the meat slightly darker than the White, but the taste (I think) is better. It is the best chicken we have found!!!

A. Unfreeze hens in fridge for a day. Clean off any little hairs left (usually by the joints). Soak in cold saltwater for 1/2 hour or so to finish bleeding the hens. Prepare any commercially sold stuffing mix that you like. Jazz the stuffing up with something, if you want, such as chopped walnuts, raisins - anything you think will go. Q. I bought these two little frozen hens at the store, how do I cook them? I'm not a chef by any means. how do you prepare the hens prior to putting them in the oven?

A. Unfreeze hens in fridge for a day. Clean off any little hairs left (usually by the joints). Soak in cold saltwater for 1/2 hour or so to finish bleeding the hens. Prepare any commercially sold stuffing mix that you like. Jazz the stuffing up with something, if you want, such as chopped walnuts, raisins - anything you think will go. What Cornish villages are best to live in?
Q. We have two children and already live in Cornwall (just) but hope to move further in, in the next few years with the view to settling. Where are god places to look, and where should we avoid? We need to be within 30mins of Truro.

A. I live in Lerryn, about a 30 minute drive from Truro, and it's truly gorgeous. My village inspired Kenneth Graham to write "wind in the willows" and "tales of the riverbank" and is one of those "sleepy" villages you sort of "stumble on" by accident. The average population is about 350, but rising to 500 during summer, due to second homeowners. The tiny school has 38 pupils, and we only have 1 pub, and a small village shop. We don't get over-run with tourists, but the ones we do get, come back year after year. The nearest town is Lostwithiel, and we are slap bang between Truro, and Plymouth. The nearest coastal resorts are Looe, Polperro, Fowey, and Polruan.

For my wedding reception, I would like cornish hens instead of average chicken. But which is cheaper?
Q. my wedding color is primarily red, so I wanted whatever type protein that is served to have some kind of cherry or pomegrante glaze...a red sauce or glaze. I don't care, i just want red represented in the meal somehow. I think my sides will be a sweet potato mash or a garlic mash asparagus or roasted brussel sprouts with parmesan. These are just ideas. I have a great caterer, but I want to have some direction with the menu.
